Join Beth Gurupriya Sanchez and Derik Eselius of Denver Yoga Underground for another Spring Cleanse based on Ayurvedic principles of Pancha Karma (the 5 actions).

This Pay-What-You-Can process is designed to help you shake off the heaviness of Winter, the stress of the chaos, and lean into a renewed relationship with your body, community, and the natural world. Springtime Ayurvedic Cooking Class

In the Spring season, nature supports us to shed accumulations from the slower, colder Winter season. While it is ideal to fast or do Panchakarma (5 actions cleanse) in the Spring, these are some foods that will help you manage a more gentle cleansing and acclimating for the season.

  • Cleansing Kitcheree (a moong dal & basmati rice spiced porridge, the classic Ayurvedic dish)

  • Liver Cleanse Subji (a cleansing vegetable dish with carrots, beets, daikon, and bitter greens)

  • Indian Sprout Salad

  • Ghee (liquid sunshine)

  • Parsley Chutney (to cleanse the blood)

3 Day Tamalada

Una Tamalada is a Tamale Making Party and I am hosting a marathon one! It is really more like an Open House for all of you interested in learning, making, eating, buying (or any combination thereof) tamales for the holiday season (if you don’t gobble them up on the drive home).

It will be held at my home and I do prefer that you reach out for the address personally if you do not know where I live and share how we know each other. You can contact me through the contact page on this website.

All tamales will be veggie (green chile and cheese or a vegan version of calabacitas). It is possible I will make a red tamale with frozen tofu and mushrooms rather than pork. It is also possible that someone will take on a sweet tamale with dried fruits, nuts, coconut, etc. I’m not totally committal on the various types but I know whatever is made will be riquisimo!

The pricing is scaled, more or less, like so:

1 dozen - $16 bucks (don’t freak, these are fattie tamales)

If you make a dozen and buy a dozen it will cost $12 bucks

If you make 2 dozen and buy a dozen it will cost $8 bucks

If you make 3 dozen, $4

If you make 4 dozen, you earned your dozen!

Something like that.

I am open to various other configurations, barters, trades, donation within your means and/or your generosity! This is my last “cooking class” of the year and it is rather like a teach, learn, mix, smear, stuff, wrap, steam, and eat, pachanga for my beloveds in the community.

Autumn Ayurveda Cooking

NIcaragua Yoga Retreat & Cultural Immersion

Restorative Yoga Training, Level 1

Restorative yoga is a healing lunar practice and it balances the vigorous solar practice of Vinyasa- style yoga, what to say of our ultra busy lifestyles. During the practice, all physiological systems rest, reset, and repair. We release deep layers of tension in the musculo-skeletal structure, nervous system, and mind while allowing ourselves to be held and supported. 

Our inner wisdom bubbles up and pervades the experience.

Skillful hands-on assists deepen the medicine of the practice.

This training will cover Restorative Yoga sequencing, methodology, cueing, assists, and use of props. We will practice together to directly experience the restful state where insight and healing occur.

A public class will be offered on Sunday of the weekend training to support a safe, intelligent at-home practice. Trainees are welcome to take this Sunday class, invite others, observe, or practice their newly-learned hands-on assists.

As the refreshing spring breeze arrives, let’s invite in the creative and rejuvenating energy of this new season. Join us for this half-day of mindfulness where we will explore the mind of love and compassion as a garden of Bodhicitta.

At its core, bodhichitta is awakening to life in order to help others awaken to life. It is both a practice and a result. It is our intention of goodness.

What seeds are there, in your mind of love, and how do you grow them? Together we will enjoy mindful sitting, a dharma talk, gentle yoga, and creative practice as we nourish ourselves and each other.

Meet our teachers

Beth’s classes are deeply inspired by her core teachers, Venerable Thich Nhat Hanh, and Ayurveda Master Teacher and Practitioner, Alakananda Ma.

Foremost in her aspiration is to serve students in a way that supports their birthright to enjoy purpose, insight, well-being, and the cultivation of inherent goodness / bodhicitta.

Viviane Ephraimson-Abt, MS, M.Ed, LPC (pronouns, she her) has practiced with Thich Nhat Hanh and the Plum Village Community since 1998. In 2002, she co-founded a local and a regional OI sangha.

Viviane, True Mountain of Peace, ordained in 2005 and became a dharma teacher in 2018. Her practice is informed by training in mindful creativity, and mindfulness-based somatic modalities, including community trauma resilience. She teaches and develops well-being initiatives at Colorado State University.

Viviane is inspired by Thay's calligraphy and poetry and the tradition of Zen arts. She loves teaching creative mindfulness practices as a way to understand the dharma, deepen our practice, build the sangha and cultivate healing and joy.

Peggy (she/her) has her EdD in Adult Education and her Master’s in Counseling Psychology. She co-authored Making Friends with Time and Love’s Garden. She is also certified to teach Gentle Yoga and she likes to combine art, music, movement and yoga in her practice. She fell in love with Thich Nhat Hanh and the Plum Village community in 1990.

Join Beth Gurupriya Sanchez and Derik Eselius of Denver Yoga Underground for a 2021 Spring Cleanse Reboot based on Ayurvedic principles of Pancha Karma (the 5 actions).

This Pay-What-You-Can process is designed to help you shake off the heaviness of Winter, the stress of the past year, and lean into a renewed relationship with your body, community, and the natural world. The cleanse will be customized to your constitution, goals, and capacity to take on unhelpful habits and behaviors.

Four Stages & Key Dates:

Get an overview of what’s to come, the supplies you will need and build a safe and sacred container with fellow cleansers. You are not alone!

Restorative Yoga Training, Level 2

This training is for teachers and practitioners who wish to add to their repertoire. We will discuss going beyond the basics and incorporate the wisdom of Ayurvedic principles, as well as add some advanced assists as they are applied to Restorative Yoga practice.

We will explore the subtle supports such as music, language, and energetics. Students can self-select their readiness for the training; Level 1 Restorative Training is not required but some yoga teacher training is recommended.

Help your students cultivate the sense of being held and supported, and allow yourself to drop down into that deep state of tranquility and cellular repair, letting go of layers of tension, and allowing your wisdom and healing power to pervade the experience.

Other topics of discussion include sequencingmethodologycueing, and use of props. We will also practice together and access the deep states of relaxation where insight and healing occur.

A public workshop will be offered on Sunday of the weekend training to help students establish a safe, intelligent at-home practice. Trainees are welcome to this Sunday offering to take class, observe, or practice their newly-learned assists.

Restorative yoga is a deeply healing lunar practice, offered to balance the vigorous solar practice of Power Yoga along with our overly-busy and modern lifestyle. Since we are not exerting effort in Restorative yoga, but in fact surrendering, all physiological systems rest and reset. The process releases deep layers of tension in the musculo-skeletal structure, nervous system, emotional body, and mind. We cultivate the sense of being held and supported, and we allow ourselves to drop into a deep state of tranquility, cellular repair, letting go of layers of tension, and allowing our wisdom and inherent healing capacity to pervade the experience. Skillful hands-on assists deepen the embodiment of rest.

The Vedic Science of Longevity helps us understand our inherent tendencies of body, mind, and personality. Ayurveda, a sister science to yoga is ideal for those interested in optimizing their deep well-being and and informs each person how to thrive in their own skin. Learn theory (101) and practices (Applied Ayurveda) to your constitution and present-moment condition.

The 101 class offers background and concepts of Ayurveda so that we can begin to see and feel into the wisdom of Ayurveda in looking at ourselves and so that we can understand the logic of this science. This class will also help you understand your own constitution.

Once you understand your constitution, the Applied Ayurveda class will include recommended daily and seasonal routines, dietary recommendations, asana, meditation, pranayama, and Ayurvedic therapies customized for you. We will also have a short cooking lesson in the Applied class. The 101 class is not required to attend the Applied class but it is HIGHLY RECOMMENDED. If you cannot attend, you must contact Beth directly at least 48 hours before the Applied Ayurveda Class.

Beth Sanchez and Derik Eselius are hosting a one or two day Nature and Yoga retreat at the YMCA Santa Maria in Grand Colorado! Come up for one day of nature and yoga or make it a full weekend. Just 1.25 hours outside of Denver.

What’s more, this will be Colorado’s first ever all-inclusive Pay What You Can yoga retreat!

It is so easy to get caught up in the hustle of it all and forget our connection to life and the natural world.  This retreat will be an opportunity to rekindle that bond. We invite all who love the natural world and yoga to step out of their routine, rejuvenate their relationship to the earth, and replenish their spirit. Maybe that’s you!

Option #2: PWYC: This is how we invite you to pay.  Submit your $50 Deposit if you will be attending just the Saturday session or submit a $100 deposit if you plan to attend both Saturday and Sunday.  This deposit is refundable up until two weeks before the workshop. After that, it is not.

Ayurveda is not actually about Indian cuisine, it is about elements, tastes, seasons, doshas, and actions in the body. As such, the principles can be applied to any cuisine.

Extended Restorative Practice

Are your rest periods in yoga class too short? Come in for a deep soak of restorative practice to repair and rejuvenate your body and energy system. In addition to Beth as the lead teacher, there will be other assisting angels to ground your muscles, mobilize your joints, traction your spine and deepen the sensate experience of resting and receiving.
